Alice was named for a quiet woman who used to come into the workshop on cold Brunswick mornings and ask for the same thing every time: ginger and lemon, no honey. The blend is mostly young ginger from a small grower in northern New South Wales with curls of whole lemon peel from a backyard tree in our co-op. Sharp on the front, warming on the close, the kind of cup that wakes you without the caffeine spike. Steep eight minutes for the full body.
